In a large pot, pour vegetable broth (0.25 cup) on the bottom. Add onion (1 small) and garlic (2 cloves). Cook on medium heat until translucent.

Add carrots (3) and celery (3 stalks). Cook for an additional 5 minutes.

Add Italian seasoning (1 tbsp) and cumin (1 tsp), along with [salt] and [black pepper] to taste. Stir to coat the vegetables.

Add the remaining vegetable broth (3.75 cups), diced tomatoes (1 can) and red lentils (1 cup).
