
Roasted Cauliflower & Potato Wraps
These satisfying wraps feature seasoned roasted cauliflower and potatoes, complemented by fresh vegetables and creamy hummus. This versatile dish makes for a delicious and nourishing meal that can be enjoyed on-the-go or as a topping for vibrant nourish bowls.

Line a [baking tray] and preheat the oven to 400°F (205°C).

Prep the potatoes (3 medium) and head cauliflower (0.5 medium) and transfer to the [baking tray].

Drizzle over the vegetable oil (1 tbsp) and toss. Then add the garlic powder (1 tsp), onion powder (1 tsp), sweet paprika (0.5 tsp), salt (0.25 tsp), and ground black pepper (0.125 tsp) and toss again. Roast for 40-45 minutes, stirring once halfway. (Consider dividing the mixture over two trays if your baking tray is small.)

Assemble the soft flour tortillas (4 large) by spreading hummus (1 cup), followed by the sliced avocado (1), diced cucumber (0.5), halved cherry tomatoes (1 cup), chopped green olives (0.25 cup) (if using), and fresh spinach (2 cups), then top with the roasted cauliflower and potatoes.
