
Healthy Vegan Cornbread
This healthy vegan cornbread is completely gluten-free and requires only 6 basic ingredients. Perfect for sweet or savory snacking, as a holiday side, or to be enjoyed as a fluffy and moist lunch to go. It's made with applesauce and is sugar-free!

Mix apple cider vinegar (2 tsp), soy milk (2 cups) and applesauce (0.5 cup) in a small bowl. If using maple syrup (2 tbsp), add it now. Let sit for a few minutes.

Preheat your oven to 400 °F (200° C) and line an 8 or 9-inch baking pan with parchment paper.

Combine all dry ingredients: cornmeal (2 cups), oat flour (1.5 cups), baking powder (1.5 tbsp), salt (0.75 tsp) and nutritional yeast (2 tbsp) in a medium bowl. Mix with a spoon, then add the wet ingredients and stir until you have a homogenous batter.

Pour the mixture into your prepared pan and bake for 20 minutes. Check with a toothpick to see if it needs longer.

Once done, remove the baking pan from the oven and let cool for a few minutes on a wire rack. Then cut into squares and serve warm!
