Healthy Protein Chocolate Waffles
These delicious and healthy chocolate waffles are budget-friendly, made easily in a blender with a waffle iron, and packed with plant-based protein and nutrients. They are oil-free, egg-free, and enhanced with whole wheat flour and unrefined sugar for a quick 15-minute meal.
Instructions
- 1
Preheat your waffle maker. Add the black beans (15 ounces), plant-based milk (0.75 cup), maple syrup (0.438 cup), cocoa powder (0.5 cup), and bananas (2 ripe) to your blender and blend until smooth.
- 2
Add in the whole wheat flour (1 cup) and baking powder (2 teaspoons) to the blender and blend until just combined. Be careful not to overwork the gluten in the flour, as this can lead to dense, stodgy waffles.
- 3
Stir in the vegan chocolate chips (0.5 cup).
- 4
Cook per your waffle maker instructions. Serve warm with your toppings of choice. Cook time is typically between 3-6 minutes per waffle, monitoring steam output or using the machine's light/timer. Keep cooked waffles warm in a 200F/100C oven if making a large batch.
