
Healthy Oil-Free Vegan Biscuits
These super speedy and healthy vegan biscuits are made with whole-grain flour and ground almonds. They contain no oil or butter and can be mixed, baked, and ready to eat in under 15 minutes. A gluten-free option is also available!

Preheat oven to 230 °C (450 °F) and line a large baking tray with parchment paper or a silicone mat.

Mix the apple cider vinegar (1 tbsp) with the plant milk (240 ml) and set aside.

Add the flour (187 g), almond flour (50 g), baking powder (1 tbsp), baking soda (0.25 tsp) and fine sea salt (0.75 tsp) to a mixing bowl and whisk together.

Add the milk mixture to the flour mixture, and stir until no dry flour is visible. Do not over-mix.

Drop large rounded spoonfuls onto the baking tray (an ice cream scoop works well). They do not spread much, so minimal space is needed between them.

Bake for 10-12 minutes, until risen, lightly browned, and a toothpick inserted comes out clean. If using gluten-free flour, bake for approximately 2 minutes longer.
