Instructions

    Preheat your oven to [180°C/350°F].

    Mash bananas (3 ripe) and add to a large mixing bowl.

    Add egg (1 flax), melted coconut oil (4 tbsp), pure maple syrup (2 tbsp), almond milk (0.5 cup), and [dash of vanilla extract] to the bowl and stir together.

    Blend rolled oats (2 cups) in a blender to create oat flour consistency and add to the bowl.

    Add baking powder (2 tsp), chopped walnuts (0.5 cup), chia seeds (2 tbsp), and ground cinnamon (0.5 tsp) and mix well.

    Pour into a lined loaf pan. For garnish, slice banana (1 extra) in half lengthwise and slightly press into the batter before placing in the oven. Bake for minutes (45) to hour (1) (depending on oven strength).

    Check that it's cooked by sticking a toothpick inside and ensure it comes out clean. Let it rest in the tin for minutes (10) before removing, then place on a cooling rack for a further minutes (10) before slicing.
