
Healthy Banana Bread

Preheat your oven to 180°C/350°F.

Mash bananas (3 ripe) with the back of a fork and add to a large mixing bowl.

Add all wet ingredients to the bowl and stir together: egg (1 flax), melted coconut oil (4 tbsp), pure maple syrup or agave (2 tbsp), almond milk (0.5 cup) and a [dash vanilla extract].

Blend rolled oats (2 cups) in a blender to create oat flour consistency and add to the bowl.

Add all remaining dry ingredients and mix well: baking powder (2 tsp), chopped walnuts (0.5 cup), chia seeds (2 tbsp) and ground cinnamon (0.5 tsp).

Pour into a lined loaf pan and for garnish, slice banana for garnish (1 extra) in half lengthways and slightly press into the batter before placing in the oven for minutes (45) to hour (1) (depending on oven strength).

Check that it's cooked by sticking a toothpick inside and see if it comes out clean. Let it rest in the tin for minutes (10) before removing, then place on a cooling rack for a further minutes (10) before slicing.
