
Dark Chocolate Coconut Bars
These delightful vegan dark chocolate covered coconut bars are made with just six simple, whole food ingredients. Enjoy a healthy-ish and incredibly delicious treat featuring the perfect combination of sweet maple, rich coconut, and nutty peanut butter, all coated in dark chocolate. Line an 8x8 inch square baking dish with parchment paper.

In a medium pot, combine the maple syrup (0.75 cup) and coconut cream (0.33 cup). Bring to a boil over high heat. Boil 8-10 minutes until thickened to a caramel-like sauce.

Remove from heat. Stir in creamy peanut butter (2 tbsp) and vanilla extract (2 tsp). Then stir in coconut flakes (4 cups).

Press the mixture into the prepared baking dish. Transfer to the freezer and freeze until firm, 30 minutes to 1 hour.

Melt the dark chocolate (12 oz) in the microwave until smooth. Let cool 10 minutes.

Cut the coconut mixture into 16 bars. Cover each bar in melted chocolate and top as desired with optional [cocoa nib], [coconut flakes], [roasted nuts], or [dried fruit]. Let the chocolate set up for about 10 minutes. Store in the fridge.
