
Crunchy Quinoa Granola
This naturally sweetened, 7-ingredient quinoa granola with almonds and oats offers a healthy, protein-packed breakfast or snack. It's incredibly crispy, crunchy, and satisfying, making it a perfect quick meal or topping for your favorite yogurt and fruit. Made in just 30 minutes, it's also vegan and gluten-free.

Preheat oven to 340 degrees F (171 C).

Combine rolled oats (1 cup), white quinoa (0.5 cup), raw almonds (2 cups), coconut sugar (1 tbsp), and sea salt (1 pinch) in a large mixing bowl. Stir to combine.

In a small saucepan, add coconut oil (3.5 tbsp) and maple syrup (0.25 cup). Warm over medium heat for 2-3 minutes, whisking frequently until completely combined with no visible separation.

Immediately pour the wet mixture over the dry ingredients and stir to ensure all oats and nuts are thoroughly coated. Spread the mixture evenly onto a large baking sheet.

Bake for minutes (20). Remove from oven, stir/toss the granola, and rotate the pan. Bake for another 5-10 minutes, watching carefully to prevent burning. The granola is done when it's deep golden brown and fragrant.

Allow to cool completely before serving. Store leftovers in a sealed bag or container at room temperature for up to 2 weeks, or in the freezer for up to 1 month.
