Instructions

    Preheat the oven to 180C fan and line a baking tray with parchment paper, lightly spraying with oil to prevent sticking.

    Place the soaked and rinsed quinoa (1 cup) in a food processor with turmeric powder (1 tbsp), salt (1 pinch), and pepper (1 pinch). Blend for 5 minutes until completely smooth.

    Pour the mixture onto the tray and spread into a circle with a spoon. Bake for 12 minutes until the edges are golden brown.

    Arrange green asparagus (8 stalk) and cherry tomatoes (6) on a separate tray, toss with olive oil (1 tsp), season with salt and pepper, and roast for 10 minutes.

    Spread vegan pesto (2 tbsp) over the baked crust. Top with the roasted vegetables, rocket salad (1 handful), and pine nuts (1 handful) before serving.
