In a mixing bowl, combine the raw buckwheat groats (1.5 cups), gluten-free rolled oats (1.5 cups), chopped raw nuts or seeds (0.75 cup), unsweetened coconut flakes (0.5 cup), chia seeds (2 tbsp), coconut sugar (3 tbsp), sea salt (0.5 tsp), and ground cinnamon (0.75 tsp). Stir to combine.

In a small saucepan over medium-low heat, warm the coconut oil (0.25 cup) and maple syrup (0.5 cup) until melted and combined. Add the nut or seed butter (3 tbsp) (optional) and stir. Pour the wet mixture over the dry ingredients and mix well to coat.

Spread the mixture evenly onto a baking sheet and bake for 25-30 minutes (or until fragrant and deep golden brown), stirring near the halfway point for even baking.

Add the dried fruit (0.33 cup) while the granola is still warm. If adding chocolate, wait until cooled completely. Store cooled granola in an airtight container for a few weeks, or freeze for up to 1 month or longer.
