In a separate bowl, whisk together plant milk (0.75 cup), vanilla extract (1 teaspoon), and applesauce (0.5 cup).

Pour the wet mixture into the dry ingredients and whisk well. Transfer the batter into a 4-6 quart crockpot set to medium heat. Optionally, sprinkle chocolate chips (1.5 tablespoons) over the top.
