Bring a [Large saucepan] of water to a boil. Slice scallions (1 bunch) and soak them in a bowl of cold water for 10 minutes to mellow their pungency, then dry thoroughly.

Whisk together ginger (2 tsp), garlic (3 clove), sesame seed paste (3.5 tbsp), light soy sauce (2 tbsp), dark soy sauce (0.5 tbsp), agave nectar (0.5 tbsp), chinese black vinegar (0.5 tbsp), toasted sesame oil (1 tbsp), and chili garlic sauce (1 heaping) in a bowl until smooth.

Cook udon noodles (20 oz) per package instructions. Reserve a small amount of noodle water, then drain and rinse under cold water until cool.

In a large bowl, combine the noodles and sauce, using a splash of reserved water if needed for creaminess. Fold in the scallions, edamame (6 oz) seasoned with kosher salt (0.25 tsp), red bell pepper (1), napa cabbage (2 handful), english cucumbers (2 handful), roasted peanuts (0.25 cup), and sesame seeds (2 tbsp). Toss well and serve.
