
Sushi Bowl with Sweet Sesame Dressing
If you love sushi but don't have the energy to roll it all up, this vibrant bowl is for you. The sweet sesame dressing, featuring soy sauce, sesame oil, and a splash of lime zest, makes this dish taste like sushi, even if seaweed is left out. This flavorful bowl is an easy and healthy weeknight meal.

In a medium pot, bring the brown rice (1.5 cups) and water (2.25 cups) to a boil. Then reduce to a simmer, partially cover with a lid, and cook for 20 minutes.

Meanwhile, make the dressing. Add the lime (1 quantity), reduced-sodium soy sauce (2 tbsp), toasted sesame oil (2 tsp), agave syrup (2 tsp), garlic powder (1 tsp), and onion powder (1 tsp) to a jar and mix well.

Prep the mango (1 quantity), avocado (1 quantity), cucumber (0.25 quantity), shredded red cabbage (1 cup), and small red onion (0.5 quantity).

When the rice is cooked, remove the pot from the heat, cover with a lid, and let rest for 5 minutes.

Add the rice to some bowls. Top with the prepared fruit and veggies. Add the cooked shelled edamame (1.5 cups) and wakame seaweed salad (0.5 cup), and drizzle over the dressing. Garnish with [toasted sesame seeds] and enjoy!
