Heat oil (1 tsp) (or use broth (3 tbsp)) in a saucepan over medium heat. Add onion (0.5 medium), of garlic (5 cloves) and chopped carrots (1 cup) and cook for mins (2).

Add stalks (4 celery), fresh thyme (1 tsp), dried oregano (0.5 tsp), poultry seasoning (1 tsp) and onion powder (0.5 tsp), and mix in. Cook for mins (2).

Add the vegetable broth (5 cups), chickpeas (15 oz), salt (0.5 tsp), and soy sauce (1.5 tsp) and mix.

Add the long grain rice (0.33 cup) and bring to a rolling boil. Cook partially covered for 15 mins (12 to) until [rice] is cooked and the flavors have developed.

Taste and adjust salt and flavor. Add more herbs, some [garlic powder], [lime juice], [black pepper] or [white pepper] if needed. Serve the soup garnished with [parsley] or [cilantro].
