Instructions

    Chop all your vegetables (finely chopped cauliflower (0.5 cup), chopped bell pepper (0.5 cup), finely chopped onion (0.75 cup), green chili (1 hot), fresh ginger (0.5 inch), cilantro (0.25 cup)) and combine them in a bowl.

    Add rice flour (2 tbsp), chickpea flour (1 cup), salt (0.5 tsp), cumin seeds (0.125 tsp), turmeric (0.5 tsp), cayenne (0.25 tsp) and baking soda (0.125 tsp) to the bowl and mix well.

    Pour in water (1 cup) and stir until a thick batter forms. Add a touch more [water] if needed, depending on the moisture from vegetables and flour type.

    Let the batter rest for minutes (5) before making waffles.

    Lightly coat your waffle maker with [oil] and preheat until ready.

    Pour a medium-thick layer of batter onto the waffle maker and spread evenly with a spatula for crispy waffles.

    Drizzle a few drops of [oil] on top before closing the lid.

    Cook until golden brown and crisp to your preference. Waffles may take a while to crisp up; adjust cooking time accordingly to ensure vegetables are cooked and waffles are crispy.

    Remove the cooked waffle and repeat with the remaining batter.

    Serve these crispy waffles warm with ketchup, salsa, or chutney. They will soften as they cool. The batter can also be used to make pancakes (see notes).
