
Chickpea Date Pilaf
This vibrant Moroccan-inspired pilaf is a complete plant-based meal packed with hearty chickpeas, roasted cauliflower, and sweet dried dates. The mixed grains are infused with warm spices and topped with crunchy pistachios and fresh coriander for a flavorful, healthy dinner or lunch option.

Preheat your oven to 200°C (180°C fan/gas 6).

In a bowl, combine 1 tbsp of olive oil (2 tbsp) with 1 tsp each of ground coriander (2 tsp), ground cumin (2 tsp), and turmeric powder (2 tsp). Toss the cauliflower (250 g) in the spice oil until coated. Transfer to a tray and roast for 10 minutes until tender.

Heat the remaining olive oil (2 tbsp) in a large pan. Fry the onion (1) for 5 minutes, then add the red pepper (1), garlic cloves (2 clove), dried dates (50 g), and chickpeas (400 g). Cook for 5 minutes until softened.

Stir in the remaining spices, roasted cauliflower, mixed grains (250 g), and half of the fresh coriander (2 handful). Heat through and season with pepper. Serve topped with the remaining coriander and pistachios (50 g).
