
Chickpea Caesar Salad Wrap
This quick yogurt-based Caesar dressing is the star in this fast recipe. Quickly roasted chickpeas add a lovely texture to this delicious wrap.

To make the chickpea croutons, add the cooked chickpeas (1 cup), olive oil (2 tsp), and salt (0.25 tsp) to a medium pan over high heat. Cook and stir often for 14 minutes, until golden. Set aside to cool and crisp.

Meanwhile, in a small bowl, mix together all of the dressing ingredients: unsweetened soy yogurt (0.5 cup), vegan mayonnaise (2 tbsp), nutritional yeast flakes (2 tbsp), lemon (0.5) (zested and juiced), capers (1 tsp) (minced), garlic powder (0.5 tsp), salt (0.25 tsp), and ground black pepper (0.25 tsp). In another bowl, mash the cooked chickpeas (1 cup) reserved for the wrap. Mix the mashed chickpeas with half of the prepared dressing.

To assemble, layer the romaine lettuce (1.5 cups) on each soft flour tortilla (1 large), followed by the mashed chickpeas and chickpea croutons. Drizzle the remaining dressing overtop.

Fold in the sides of each wrap, then roll it shut. Serve with any remaining dressing on the side, and enjoy!
