
Cauliflower Tikka Masala
Savory, bold, and mildly spiced, this Cauliflower Tikka Masala is a flavor-packed comfort meal that is easy to make and budget-friendly.

Preheat oven to 450°F (230°C). Place cauliflower (1 large) florets on a rimmed baking sheet. Drizzle with [null avocado oil] and sprinkle with garam masala (2 tsp), [null salt], and [null pepper]. Combine with hands. Roast for 15-20 minutes until tender and lightly browned, tossing halfway.

In a small bowl, combine the garam masala (1.5 tsp), ground cumin (0.75 tsp), turmeric (1 tsp), smoked paprika (0.75 tsp), and crushed red pepper (0.5 tsp). Set aside.

In a large pan, heat avocado oil (2 tbsp) over medium heat. Add red onion (0.5 medium) and sauté until translucent and slightly golden, about 3-5 minutes.

Turn heat down. Add garlic (3.5 cloves) and fresh ginger (1 tbsp). Sauté for 0.5-1 minute until fragrant. Now add the combined [null spice mix] and sauté until fragrant, about 30 seconds.

Add tomato puree (2 cup), agave nectar (2.5 tsp), and salt (0.75 tsp). Bring to a simmer, then lower heat to maintain a low simmer. Cook for 10-15 minutes, stirring often until the sauce is very thick. Stir in coconut milk (1 cup) and lightly simmer 2-4 minutes to combine and thicken (do not boil). Stir in lime juice (1 tbsp) and taste before adding more.

Add roasted [null cauliflower] and gently toss to combine. Taste for seasoning and adjust if needed, then remove from heat. Serve over [null rice] with [null naan], lime wedges, and chopped cilantro (0.5 cup) if desired.
