Instructions

    Heat the olive oil (1 tbsp) in a lidded frying pan over a low heat. Add the onion (2 red) and thyme (1 tsp). Cover and cook for 15 minutes, stirring occasionally until soft and slightly golden.

    Remove the lid, reduce the heat to low, and stir through the brown sugar (1 tbsp), balsamic (4 tbsp), and water (2 tbsp). Cook for a further 5 minutes until the liquid has almost disappeared.

    Set aside to cool. Once cooled, freeze in a well-sealed bag or container. Defrost overnight in the fridge, then reheat in a pan with a splash of cold water.
