These quick Avocado Caprese Bruschetta are a perfect appetizer, ready in just 10 minutes and always a crowd-pleaser! Crispy baguette slices are topped with fresh avocado, juicy tomatoes, and creamy vegan mozzarella, then drizzled with a homemade balsamic reduction. Preheat your oven to 450 degrees Fahrenheit (230 degrees Celsius).

Line a baking sheet with a silicone mat or place a baking stone into the preheating oven.

Brush the baguette (0.5) slices with olive oil (1.5 tbsp) and bake for minutes (5), until lightly golden and crispy.

While the toasts are baking, combine the cherry tomatoes (0.5 cup), cubed avocado (0.5 cup), and vegan mozzarella (0.33 cup) in a bowl. Mix gently.

For the balsamic reduction, combine the balsamic vinegar (0.5 cup) and coconut sugar (1.5 tbsp) in a small pot over medium-high heat. Stir constantly until the glaze begins to thicken, about minutes (5). Watch carefully to prevent it from becoming too thick.

Remove the balsamic reduction from heat. Season with fine salt (0.5 tsp) and ground black pepper (0.5 tsp).
