
Black Beans Avocado Toast

In a bowl, combine the cherry tomatoes (270 g), onion (0.25 red), juice (0.5 lime), and olive oil (1 tbsp). Set aside.

In a pan, heat olive oil (2 tbsp). Add the remaining onion (0.75 red) and fry until soft. Add the cloves (2 garlic) and cook for min (1) until fragrant.

Stir in the ground cumin (1 tsp) and chipotle paste (2 tsp). Add the black beans (2 cans) and a [splash water], then stir and cook gently until heated through. Stir in most of the tomato mixture and cook for min (1). Season well and add most of the [fresh coriander].

Toast the bread (4 slices) and drizzle with the remaining olive oil (1 tbsp). Serve a slice on each plate topped with the bean mixture. Arrange avocado (1) slices on top, then sprinkle with the remaining tomato mixture and [fresh coriander] leaves.
