
Veggie Brown Rice Stir Fry

Mix together the brown rice (1 cup) and vegetable broth (2 cups) in a medium pot with a lid. Over high heat, bring to a boil. Cover with the lid and reduce the heat to low. Cook for 40 minutes. Remove from heat and set aside.

In a large pan over medium-high heat, heat vegetable oil (1 tbsp). Add the yellow onion (1 small), bell pepper (1 red), garlic (3 cloves), frozen broccoli florets (1 cup), and extra firm tofu (1 package), and saute for 4 to 5 minutes, until veggies become tender.
