
Za'atar Mint Veggie Wraps
These vibrant wraps feature sautéed vegetables seasoned with a homemade Za'atar spice mix, paired with creamy hummus and a refreshing garlic plant-based yogurt sauce. Filling and flavor-packed, these wholesome wraps are quick to prepare and make a satisfying meal.

Heat the olive oil (1 tbsp) in a large pan over high heat. When hot, toast the cumin seeds (1 tsp) for 2 minutes, stirring throughout. Then add the zucchini (1), eggplant (1 small), and salt (0.5 tsp). Cook this for 2-3 minutes, stirring occasionally.

Add the cooked brown lentils (1.5 cups), bell pepper (1 green), and za'atar spice (1.5 tbsp) to the pan. Drop the heat to medium and cover with a lid. Cook until the veggies are softened to your liking, about 8-10 minutes.

Meanwhile, to a medium bowl, add in the unsweetened plant yogurt (1 cup), cloves (2 garlic), lemon (0.5) juice, fresh mint leaves (1.5 tbsp), and salt (0.25 tsp). Stir, and set aside.

Warm up your wraps, if desired. Brush a bit of water on both sides of the bread (4 pita), then add it to a preheated skillet to soften and lightly toast.

To assemble, spread some hummus (0.5 cup) and yogurt sauce on the pita, and top with both fresh and sautéed veggies. Drizzle over some tahini (2 tbsp), fold the wraps, and enjoy!
