
Veggie Chow Mein

In a large pot over medium-high heat, boil water and cook the instant noodles (1 package) according to package directions until al dente.

While the noodles are cooking, prepare the vegetables. In a large pan or wok, heat canola oil (1 tbsp). Add the celery (3 ribs), onion (0.5 yellow), chopped green cabbage (1 cup), grated carrots (0.5 cup), and garlic cloves (2 small) and sauté for 3 to 4 minutes or until the celery and onion are tender and the onion is translucent.

Add the vegetable broth (0.5 cup) and soy sauce (2 tbsp). Bring to a boil, then turn down the heat and simmer for 5 minutes.

Add the cooked [instant noodles] and bean sprouts (1 cup) and mix thoroughly. Cook for 5 minutes, stirring occasionally.
