Vegan Protein Cookies

Satisfying and brownie-like, these vegan protein cookies are a wholesome alternative to processed snack bars. Naturally sweetened with ripe bananas and coconut sugar, each soft-yet-chewy cookie provides a significant plant-based protein boost from pea protein and peanut butter. Instructions

  1. 1

Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.

  2. 2

Mash banana (1 cup) in a large bowl. Whisk in vanilla extract (2 tsp), coconut sugar (0.33 cup), and peanut butter (0.33 cup) until smooth.

  3. 3

In a separate bowl, whisk together pea protein powder (0.75 cup), cocoa powder (0.25 cup), baking powder (1 tsp), and rolled oats (0.5 cup).

  4. 4

Pour the dry mixture into the wet and stir to combine into a thick dough. Fold in mini vegan chocolate chips (0.33 cup).

  5. 5

Scoop 3 tablespoons of dough per cookie. Roll into balls, place on the tray, and flatten with a fork into a criss-cross pattern.

  6. 6

Bake for 12 to 14 minutes until the bottoms are set. Cool on the pan for 5 minutes before moving to a wire rack.
