
Vegan Protein Cookies
Satisfying and brownie-like, these vegan protein cookies are a wholesome alternative to processed snack bars. Naturally sweetened with ripe bananas and coconut sugar, each soft-yet-chewy cookie provides a significant plant-based protein boost from pea protein and peanut butter. They are easy to make, entirely oil-free, and perfect for post-workout fuel or a healthy midday snack.

Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.

Mash banana (1 cup) in a large bowl. Whisk in vanilla extract (2 tsp), coconut sugar (0.33 cup), and peanut butter (0.33 cup) until smooth.

In a separate bowl, whisk together pea protein powder (0.75 cup), cocoa powder (0.25 cup), baking powder (1 tsp), and rolled oats (0.5 cup).

Pour the dry mixture into the wet and stir to combine into a thick dough. Fold in mini vegan chocolate chips (0.33 cup).

Scoop 3 tablespoons of dough per cookie. Roll into balls, place on the tray, and flatten with a fork into a criss-cross pattern.
