
Cinnamon Protein Bars
These delightful no-bake protein bars are soft, chewy, and bursting with warm cinnamon flavor, making them an incredibly easy and satisfying treat.

Line an [8x8 inch baking dish] with [parchment paper] and set aside.

In a [large mixing bowl], combine the oat flour (2 cups), coconut flour (0.5 cup), vegan vanilla protein powder (0.5 cup), cinnamon (1 tbsp), and granulated sugar (2 tbsp) and mix well.

In a [microwave-safe bowl], combine the almond butter (0.5 cup) and brown rice syrup (0.5 cup) and heat until melted. Add the vanilla extract (1 tsp) and pour the wet mixture into the dry and mix well. It should be crumbly.

Using a [spoon], add unsweetened almond milk (2 tbsp) one spoonful at a time until a thick, firm batter is formed. Add more if needed.

Transfer the protein bar mixture to the lined [8x8 inch baking dish] and press firmly. Rub the cinnamon (1 tbsp) and granulated sugar (2 tbsp) topping on it and refrigerate for at least 30 minutes. Slice into bars with a [knife].
