    Place the [medjool dates] in a food processor fitted with a steel blade. Pulse several times until the dates break into small bits and form a ball that sticks to the side of the bowl.

    Add the old fashioned rolled oats (0.75 cup), peanut butter (0.25 cup), mini chocolate chips (3 tablespoons), chia seeds (1 tablespoon), and kosher salt (0.125 teaspoon).

    Pulse until the mixture is broken down into small pieces but not completely smooth. Add the cocoa powder (3 tablespoons) and pulse to combine. (The dough will resemble crumbs but should hold together when pressed into a ball. If too dry, add more [peanut butter]; if too sticky, add more [old fashioned rolled oats].)
