Instructions

    Chop the [sweet onion], [garlic], [fresh ginger], [carrots], [green onions], and [fresh mango].

    Heat the sesame oil (2 tbsp) in a large wok or skillet over medium heat.

    Add the sweet onion (1 small) and carrots (1 cup) and sauté for 3-5 minutes, until softened.

    Add the fresh ginger (2 tbsp) and garlic (5 cloves). Cook for 1 more minute.

    Stir in the garlic chili paste (0.5 tsp), rice wine vinegar (1 tbsp), hoisin sauce (2 tsp), and soy sauce (3 tbsp). Cook for 1-2 minutes.

    Add the cooked rice (3 cups) and chickpeas (1 can). Combine well.
