Chop the [sweet onion], [garlic], [fresh ginger], [carrots], [green onions], and [fresh mango].

Heat the sesame oil (2 tbsp) in a large wok or skillet over medium heat.

Add the sweet onion (1 small) and carrots (1 cup) and sauté for 3-5 minutes, until softened.

Add the fresh ginger (2 tbsp) and garlic (5 cloves). Cook for 1 more minute.
