
Vegan Crepes
These soft, delicate, and thin vegan crepes are incredibly easy to make with just a few simple ingredients. Perfect for a weekend breakfast, they hold their shape beautifully and can be served plain or with your favorite sweet toppings like fresh fruit, maple syrup, or chocolate sauce.

In a food processor, combine all-purpose flour (1 cup), baking powder (1 tsp), and salt (0.25 tsp). Pulse until combined. In a small bowl, whisk together soy milk (1 cup), coconut oil (2 tbsp), maple syrup (2 tbsp), vanilla extract (1 tsp), and cold water (0.5 cup). With the motor running, pour the wet ingredients into the dry and blend until smooth. Transfer to a bowl, cover, and refrigerate for 30-60 minutes.

Heat a 8 or 10 inch frying pan over medium heat. Lightly coat the pan with [cooking spray]. Once hot, pour batter (0.25 cup) into the pan and swirl to form a thin layer. Cook for 1-2 minutes until small bubbles appear on top and edges crisp. Loosen the edge with a [rubber spatula], flip, and cook for about 1 more minute. Remove and set aside. Repeat with remaining batter.

To serve, fold each crepe into quarters. Sprinkle with [powdered sugar] and top with [blueberries]. Optionally, fill with [vegan curd], [mixed berry compote], or [chocolate ganache].
