
Vegan Crepes

In a large bowl, whisk together the all purpose flour (1.5 cups), cornstarch (1 tbsp), granulated sugar (1 tbsp) and salt (0.25 tsp). Add the canola oil (2 tbsp), soy milk (1 cup) and sparkling water (1 cup). Whisk until smooth.

Heat a medium non-stick pan to medium heat. Melt vegan butter (1 tbsp). Add about crepe batter (0.33 cup) and immediately rotate the pan to form a thin circle.

Cook until the top is dry, about minutes (2). Flip with a spatula and cook for seconds (30) on the other side. Remove and repeat with remaining batter.

Serve: Squeeze [lemon juice] on a crepe, add some [powdered sugar], and roll or fold. Dust with more [powdered sugar] and serve with [berries] and [maple syrup].
