
Vegan Cinnamon Rolls
Making warm and gooey vegan cinnamon rolls doesn’t get much easier than this! This recipe is fairly simple to prepare and the rolls bake up to be big, fluffy, and bursting with cinnamon sugar. Slathered with vanilla icing on top, they’re the perfect treat for special breakfasts and brunches!

In a medium microwave-safe bowl, combine unsweetened plain soy milk (1 cup) and apple cider vinegar (1 tbsp). Mix well until thickened like buttermilk. Heat in the microwave in 30-second intervals until lightly warm (approx 110F). Stir in sugar (1 tbsp) and rapid yeast (2.25 tsp). Cover with a warm damp kitchen towel and let rest for mins (5).

In a large bowl, add the buttermilk mixture. Gradually add and mix all-purpose flour (3 cups), 1 cup at a time, until all ingredients are incorporated but not overmixed. The dough will be flaky. Knead lightly with your hands until it forms a dough ball.

Remove the dough. Add neutral oil (2 tsp) to the bowl and coat well. Place the dough ball back in the oiled bowl, cover with a warm damp towel or plastic wrap, and let sit in a warm area for hour (1) or until doubled in size.

While the dough is rising, in a small bowl, combine packed brown sugar (0.25 cup), cinnamon (2 tbsp), and nutmeg (0.25 tsp). Massage with fingers or a fork until sandy. Set aside.

Prep an 8x8 deep baking dish by oiling it well. Set aside.

Once the dough has doubled, lightly flour a large surface. Roll the dough into a 0.25 inch thick rectangle (about 20 inches long by 12 inches wide).

Melt plant-based butter (3 tbsp). Using a brush, evenly coat the dough with the melted butter, then evenly distribute the [sugar spices mixture] over it.

Gently and tightly roll the dough lengthwise into an even log. If sticking, use a spatula to help scrape the dough from the surface as you roll.

Divide the dough log into rolls (9) (about 2 inches each) using a sharp knife or string floss. Immediately place each roll in the prepared baking dish, leaving about 0.5 inch between them.

Cover the baking pan with plastic wrap and allow it to sit in a warm place for minutes (10). The rolls should rise and touch each other.

Preheat the oven to 350F. Ensure the rolls have risen and are touching. If not, continue rising.

Place a baking sheet covered with aluminum foil on the bottom oven rack to catch any spills.

Remove plastic wrap. Place the baking pan in the middle oven rack and bake for minutes (25) or until the rolls are lightly golden brown.

While rolls bake, prepare the frosting: In a medium bowl, whisk powdered sugar (0.5 cup), plain soymilk (2 tbsp), vanilla extract (1 tsp), and [pinch salt] until smooth.
