
Vegan Apple Cinnamon Streusel Cake

Preheat oven to 180 ℃ (355 ℉). Lightly grease a 9-inch (22 cm) springform pan and line the bottom with parchment paper.

In a large mixing bowl, whisk together the all-purpose flour (250 g), baking powder (2 tsp), baking soda (0.5 tsp), salt (0.5 tsp), cinnamon (1 tsp), and cane sugar (100 g). Set aside.

In a measuring jar, whisk together the plant milk (120 ml), pure vanilla extract (1 tsp), and apple cider vinegar (1 tbsp). Pour the milk mixture into the dry flour mixture. Add the applesauce (100 g) and vegan butter (120 g), then stir with a whisk or spatula until just combined.

Transfer the batter into your prepared pan. Spread the apples (450 g) on top, gently pressing them into the dough.

Make the streusel by mixing the all-purpose flour (75 g), cinnamon (0.5 tsp), brown sugar (3 tbsp), and vegan butter (35 g) until crumbly. Crumble the mixture over the cake.

Bake in the preheated oven for approximately mins (45) to mins (50) or until a skewer inserted into the center comes out almost clean.
