Instructions

    Warm the unsweetened soy milk* (2 cup) in the microwave for 1 minute and 30 seconds. Ensure it is warm like bathwater, not too hot to kill the yeast.

    In a large bowl, add the warm [unsweetened soy milk*], granulated sugar (0.5 cup) and quick rise yeast (2 packet). Let it sit for 5 minutes until foamy.

    To the yeast mixture, add the vegan butter, melted (0.5 cup), salt (0.5 teaspoon) and all purpose flour (4.5 cup). Stir until combined, then add additional [all purpose flour], 0.33 cup at a time, until the mixture pulls away from the sides of the bowl, remaining soft and slightly sticky.

    Turn the dough onto a lightly floured surface and knead for 3-4 minutes until smooth. Return the dough to the bowl, cover, and let it rise in a warm place for 20 minutes (preheat oven to 170°F (77°C), turn off, place bowl inside with door cracked).

    Preheat the oven to 375°F (190°C).

    Sprinkle a clean counter or pastry mat with [flour]. Punch the dough down and use a rolling pin to roll it into a large rectangle, about 0.5 inch thick. Sprinkle more [flour] on top to prevent sticking.

    Spread the softened vegan butter (6 tbsp) over the rolled dough, leaving an inch around the edges. Sprinkle brown sugar (0.5 cup), then ground cinnamon (2 tbsp) on top of the butter.

    Starting with the long end closest to you, roll the dough into a tight log. Place seam side down. Using a serrated knife, cut off the two ends, then slice into 12 [rolls]. Place the [rolls] in a lightly greased 9x13-inch casserole dish, or two 9-inch pie pans.

    Bake for 20-30 minutes, until the [rolls] are lightly golden brown and the centers are cooked through.

    While the rolls are baking, make the icing. In a medium bowl, add the vegan cream cheese (8 oz), powdered sugar (1.5 cup) and pure vanilla extract (0.5 teaspoon). Using a hand mixer (or stand mixer), beat until smooth and creamy.

    If you prefer a simple icing, whisk together powdered sugar (1 cup), unsweetened soy milk* (2 tbsp) and pure vanilla extract (0.25 teaspoon), until smooth and creamy.

    Allow the [rolls] to cool for 10 minutes before drizzling with the icing. Serve and enjoy!
