
Apple Cinnamon Waffles

Turn on your waffle iron.

In a small bowl, whisk together the warm water (2.5 tbsp) and ground flax (1 tbsp) until thoroughly combined. Set aside for 10 minutes.

In a medium bowl, whisk together the vanilla plant-based milk (1.75 cups), vegetable oil (0.33 cup), apple (1 honeycrisp), and vanilla extract (1.5 tsp). Set aside.

In a large bowl, whisk together the all purpose flour (2 cups), granulated sugar (1.5 tbsp), brown sugar (1 tbsp), baking powder (3 tsp), salt (0.25 tsp), and ground cinnamon (1.5 tsp).

Create a well in the center of the dry ingredients and pour in the vegan milk mixture and flax mixture. Whisk gently, just until combined. Make sure to not overmix.

Scoop the desired amount of batter onto the preheated waffle iron. Follow your waffle iron instructions to cook. Repeat with the remaining batter until all the waffles are cooked.
