
Vegan Burger
These hearty vegan burgers combine the rich crunch of walnuts with protein-packed chickpeas and vital wheat gluten for a satisfying meaty texture. Perfectly seasoned with smoky paprika, liquid smoke, and a tangy BBQ glaze, these burgers hold up beautifully on the grill or stovetop. Process walnuts (1 cup) in a food processor until crumbly, then transfer to a mixing bowl.

Add chickpeas (1 cup), soy sauce (1 tbsp), and tomato paste (2 tbsp) to the processor and blend until combined, then add to the walnuts.

Stir in vegan mayonnaise (1 tbsp), hoisin sauce (1 tsp), dijon mustard (1 tsp), garlic powder (0.5 tsp), onion powder (0.5 tsp), salt (1 tsp), ground black pepper (0.25 tsp), smoked paprika (0.5 tsp), and liquid smoke (0.125 tsp).

Mix in couscous (1 cup) and vital wheat gluten (0.5 cup). Knead the mixture 25 times to activate the gluten and form a ball.

Divide the mixture into four and shape into burger patties using your hands or a round cutter.

Heat olive oil (2 tbsp) in a pan over medium-high heat. Fry patties for 5 minutes per side, brushing each side with bbq sauce (2 tbsp) as they cook.

Serve on buns (4) with lettuce (1 handful), tomatoes (4 slice), pickled gherkins (8 slice), avocado (0.5), red onion (0.25), and thousand island dressing (2 tbsp).
