Add fresh parsley (1 bundle), cloves garlic (3 large), lemon (1 large) juice, cumin (1.25 tsp), and tsp sea salt (0.5 scant) and tsp black pepper (0.5 scant) to a food processor and mix until combined.

Add chickpeas (1 can) and pulse until incorporated but still slightly chunky, maintaining some texture.

Transfer the mixture to a mixing bowl and add nut meal (0.25 cup). Mix until a loose, firm dough forms. Adjust seasonings as needed, adding more [sea salt] if desired.

Divide the dough into 4 sections and form into 4 large patties, roughly 0.5-inch thick.

Place patties on a foil-lined baking sheet and refrigerate or freeze for 15 minutes to firm up. Preheat oven to 375 degrees F (190 degrees C) while chilling.

OPTIONAL: For extra crust, heat a large skillet over medium-high heat with olive oil (2 tbsp) or avocado oil (2 tbsp). Add falafel, flip after about 3-4 minutes until golden brown, then cook the other side for another 3-4 minutes. Return to the baking sheet for continued baking, or bake directly in the oven.

Bake for 30-40 minutes, flipping once halfway through for even cooking. Longer baking yields firmer falafel.
