
Black Bean Bulgur Burgers
Whip these homemade Vegan Black Bean and Bulgur Burgers up with just a few ingredients and minimal prep time. They're mildly spiced with tons of flavor and are the perfect, simple veggie burgers to serve up on toasted burger buns with your favorite fresh toppings.

In a small pan, bring the vegetable broth (1 cup) to a boil. Add uncooked bulgur wheat (0.5 cup) and lower the heat to medium. Simmer for about 10 minutes, then drain very well in a fine-mesh strainer, pushing the bulgur to remove all liquid.

In a medium bowl, mash the black beans (15 ounces) until smooth. Add the remaining ingredients: drained bulgur, cilantro (0.5 cup), onions (3 green), lime juice (1 tbsp), cumin (0.5 tsp), and sea salt (0.75 tsp). Mix well and let rest for 10 minutes to firm up.

Place a medium skillet over medium heat and spray with [cooking spray]. Using a 2 tbsp cookie scoop, drop patties onto the hot pan. Flatten to about 0.5 inch thickness with a spatula. Cook 4-5 at a time for 1-2 minutes per side until golden brown, adding more [cooking spray] as needed. Adjust heat to medium-low if patties cook too fast. Serve on their own or in a tortilla with avocado and salsa.
