Tomato & Olive Crostini

Instructions

    Quarter the tomatoes (20). Pit and roughly chop black olives (1 handful) (or green olives).

    In a mixing bowl, toss the [tomatoes] and [black olives] with extra virgin olive oil (2.5 tbsp) and balsamic vinegar (1 tbsp). Season carefully with sea salt (0.5 tsp), black pepper ground (0.25 tsp), and crumbled chilli (0.25 tsp).

    Spoon the mixture generously over your hot crostini (12) and sprinkle with fresh basil (0.25 cup) to serve.
