Halve the ripe tomatoes (600 g) and place them into a large serving bowl. Add the grated (2 carrots,), chilli (1 red), toasted pine nuts (25 g) and large juicy raisins (50 g); toss well.

Mix the extra-virgin olive oil (3 tbsp) with the sherry vinegar (2 tbsp) and a salt (1 pinch) and a black pepper ground (0.5 tsp). Pour into the salad mix and toss again. Set aside for about 15 minutes to allow all the flavors to develop before serving.
