Roasted Sweet Potato, Green Beans & Chickpeas

Instructions

    Preheat oven to 375 degrees F.

    Evenly spread out potatoes (3 sweet) onto a baking sheet, drizzle with olive oil (2 tbsp), ground turmeric (2 tsp), [null salt] and [null black pepper]. Cover with aluminum foil. Bake for 25 minutes or until potatoes are fork tender.

    Remove skins from chickpeas (15 oz).

    Spread green bean (2 cups) and chickpeas (15 oz) onto the baking sheet. Drizzle with the remaining olive oil (2 tbsp), [null ground turmeric], [null salt] and [null black pepper].

    Bake uncovered for another 22 minutes.
