
Vibrant Roasted Beetroot Hummus

Line a baking tray and preheat the oven to 200°C (400°F).

Cut the beets (2 medium) into 1 cm (0.5 inch) slices and roast for 40-45 minutes until cooked through. Let cool.

Add the roasted beets (2 medium), cooked chickpeas (1.5 cups), water (0.25 cup), lemon (1) (juiced), tahini (2 tbsp), olive oil (1 tbsp), cloves (2 garlic), and salt (0.5 tsp) to a food processor. Blend until smooth. Season to taste.
