
Roasted Guacamole

Preheat oven to 200°C (fan 180°C, gas 6). Halve the plum tomatoes (8 baby) and chilli (1 red) lengthways, placing them cut-side up on a small baking tray. Sprinkle with caster sugar (0.5 tsp) and smoked paprika (2 pinch). Drizzle with olive oil (0.5 tbsp). Roast for mins (15) until the tomatoes are soft and slightly charred at the edges. Allow to cool, then roughly chop.

In a bowl, combine the onion (0.25 red) with the cooled chopped tomatoes and chilli. Stir in the zest (1 lime), juice (1 lime), smoked paprika (0.25 tsp), and salt (2 pinch) (to taste). Halve, peel, and stone the avocado (1), then mash the flesh until it's chunky. Add the mashed avocado to the bowl along with the fresh coriander (3 tbsp) and gently fold all ingredients together.
