
Roasted Fennel with Garlic & Herbs
This roasted fennel is an easy-to-prepare side dish, caramelized on the edges, and deliciously sweet in flavor. It's a fantastic accompaniment to any meal and is naturally vegan and keto-friendly.

Preheat the oven to 400 degrees Fahrenheit (205 degrees Celsius).

Remove stalks from the bulbs fennel (2 large) and cut them in half lengthwise. Slice each halved fennel bulb into thick slices (0.5 inch) and arrange evenly on a parchment paper-lined baking sheet.

In a bowl, combine olive oil (3 tbsp) and garlic (2 cloves), minced. Brush over the fennel slices. Sprinkle with thyme (1 tsp), salt (0.75 tsp), and black pepper (1 tsp).

Roast for 25 minutes. After 25 minutes, sprinkle nutritional yeast (0.25 cup) over the fennel. Return to the oven and bake for another 10 minutes.

Check if fennel is tender and caramelized; if not, cook for an additional 5-8 minutes. Serve warm.
