
Roasted Garlic Red Pepper Hummus
This vibrant red pepper hummus offers a smoky, slightly sweet twist on traditional hummus. Made by blending roasted bell peppers, chickpeas, tahini, lemon juice, and garlic, it's perfect as a dip, spread, or accompaniment to your favorite vegan dishes.

Line a baking tray and preheat the oven to 450°F (250°C)*.

Add the bell peppers (2 red) and cloves (6 garlic) to the tray. Toss with olive oil (1 tbsp), and bake for 25 minutes, or until the bell peppers are lightly charred. Flip once halfway.

Remove any charred skin and peel off the bell pepper and garlic. Transfer to a food processor and add all the remaining ingredients: cooked chickpeas (2 cups), tahini (3 tbsp), lemon (1) (juiced), olive oil (1 tbsp), cold water (1 tbsp), balsamic vinegar (2 tsp), sweet paprika powder (0.5 tsp), and salt (0.5 tsp). Blend until smooth.

For a creamier consistency, consider adding more [olive oil], [tahini], or [lemon] juice to taste. Plate, garnish, and serve!
