Instructions

  1. 1

Preheat your oven to 425 degrees F and line a large rimmed baking sheet with parchment paper.

  2. 2

Trim the tough outer edge of the broccoli (1.75 lb) stalks and slice the inner core into rectangular pieces.

  3. 3

Cut the broccoli crowns into large, flat florets approximately 2 inches wide.

  4. 4

Toss the broccoli pieces on the sheet with extra virgin olive oil (2.5 tbsp), kosher salt (0.5 tsp), granulated sugar (0.25 tsp), ground black pepper (0.25 tsp), and red pepper flakes (1 pinch).

  5. 5

Spread in a single layer and flip florets so the flat cut sides touch the pan for better browning.

  6. 6

Bake the broccoli for 20 minutes.

  7. 7

Flip the broccoli, rotate the pan, and continue roasting for 5 to 10 more minutes until dark and crispy.

  8. 8

Serve immediately topped with vegan parmesan (1 handful), balsamic glaze (1 dash), or a squeeze from lemon wedges (1 wedge).
