Roasted Beet Hummus

Instructions

    Place the roasted red beet (1 small) in a food processor and pulse until finely chopped.

    Add the chickpeas (1 can), lemon (1 large) zest, lemon (0.5 large) juice, salt pepper (1 pinch), garlic cloves (2 clove), and tahini (2 tbsp). Process until the mixture is completely smooth.

    While mixing, slowly drizzle in the extra virgin olive oil (0.25 cup) until creamy.

    Taste and adjust seasoning with more salt, lemon, or oil if needed. Add a splash of water if the hummus is too thick.
