
Pressure Cooker Lentil Soup
This warm and comforting lentil soup can be prepared in just 20 minutes using a pressure cooker, making it perfect for a quick and hearty meal. It's packed with nutrient-rich lentils, fresh vegetables, and savory spices for a wholesome and satisfying dish.

Heat pressure cooker on medium heat, or set to Saute function if using an electric model, such as an Instant Pot.

Saute onion (1 medium), garlic (3 cloves), ground cumin (2 teaspoons), smoked paprika (1.5 teaspoons), salt (1 teaspoon), carrots (2), stalks (2 celery), and potatoes (1 pound) for 3-5 minutes, or until onions begin to soften.

Stir in the red lentils (1 cup) and green lentils (1 cup) to combine.

Add water (8 cups) to cover.

Lock the lid into place and bring to high pressure. Once at pressure, reduce heat to maintain pressure and cook for 3 minutes. If using an electric model, the pressure will be maintained automatically.
