Pick over the [red lentils] and remove any stones or shriveled lentils, then rinse them in a fine mesh sieve.

Sauté the red lentils (0.5 cup), sweet potato (1 large), garlic (2.5 cloves), and salt (1 tsp) over medium heat in the pressure cooker for 1-2 minutes, to bring out the garlic flavor and warm up the cooker.

Add the crushed tomatoes (2 can) and water (1.5 cup), stirring well to ensure the [red lentils] do not stick to the bottom.

Bring the pressure cooker to high pressure. Reduce heat to maintain pressure for minutes (13). If using an electric pressure cooker, set to high for minutes (13).

Allow the pressure to release naturally for 10-15 minutes before removing the lid. If not fully released, use the valve.

Stir to combine. Puree with an [immersion blender] if a smooth sauce is desired before serving.
