Pear Vinaigrette

This 10-minute pear vinaigrette is perfect for enhancing fall and winter salads. Simply blend a pear, pear vinegar (or white wine vinegar), mustard, and olive oil, then season to taste. This recipe yields approximately 1 cup of flavorful dressing.

Instructions

    Peel, seed, and coarsely chop the pear (1). Be sure to cut out any bruised areas.

    Combine the pear (1), pear vinegar (5 tbsp), dijon (1 tsp), kosher (0.5 tsp) salt, and black pepper (0.25 tsp) in a mini-chopper or food processor. Whirl around enough to break up the pear.

    Add the extra-virgin olive oil (5 tbsp) and whirl for 30 seconds to completely emulsify. If whisking by hand, gradually drizzle in the oil until an emulsion is apparent.

    Test the ratio balance of oil to vinegar by dipping a leaf of greens into the dressing and tasting it. Adjust ratio and seasonings as needed before serving.
